Lebanese Green Olive Sauce with Mint

Italian Green Olive Sauce with Mint

Green Olive Suace

Ingredients:

  • 1/2 cup pitted Lebanese green olives
  • 1 1/2 teaspoons minced garlic
  • 1/2 teaspoon origano
  • 1/4 cup chopped fresh mint leaves
  • 5 tablespoons grated Parmesan
  • 2 teaspoons olive oil
  • 1/2 cup water
  • salt and pepper to tast

Method:

1. Place the olives, parmesan, garlic, oregano, mint in food processor and add the water. puree the mixture for few seconds keeping some texture not very smooth

2. In a large bowl, toss with pasta, and serve immediately. Garnish with additional olives and mint leaves....Enjoy

Tomato Ginger Sauce

Ingredients:

  • 3 cups diced peeled fresh ripe tomatoes
  • 3/4 cup minced onion
  • 2 teaspoons minced fresh ginger
  • 2 minced garlic
  • 1/4 stick extra virgin olive oil
  • 1/4 cup minced parsley
  • salt and pepper to taste

Method:

1. In medium skellet over moderate heat, add olive oil and cooke the onion, ginger and garlic for about 3 min

2. Stir in the tomatoes, and gen­tly simmer, for 12 min, stirring occasionally

3. Season to taste with salt and pepper. Put the sauce in a food processor or blender until smooth, and add the parsley.

4. Toss with hot pasta. Serve immediately.

Tomato Basil Sauce

Ingredients:

  • 3 large ripe peeled and chopped tomatoes
  • 2 tablespoons extra-virgin olive oil
  • 3 cloves minced garlic
  • 5 sprigs of fresh basil
  • Freshly ground pepper and salt to taste

Method:

  1. In large saucepan, heat the olive oil on moderate heat, add the garlic and stir for one min.
  2. Add the tomatoes, basil, salt and pepper and stirl the mixture well, reduce the heat and simmer for 10 min.
  3. Discard the basil springs and place the mixture in food processor for the right consistency
  4. Toss with hot pasta, and serve immediately

Ingredients:

  • 1 1/2 pound cooked shrimp
  • 2 tablespoons butter
  • 1/3 cup chopped scallion
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 8 ounces Asiago or Gruyere cheese
  • 1/4 cup sherry
  • 1 can sliced mushrooms. drained
  • 1/4 teaspoon Worcestershire sauce
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon salt

Method:

1. In medium skillet, add butter and flour, cook over low heat till light brown.

2. Add milk gradually, making a smooth paste; cook over low heat until thickened andbubbly.

3. Add cheese; continue cooking over low heat until cheese melts, then salt and pepper to taste.

4. Stir in remaining ingredients. Use over pasta, fish fillet or other seafood

Ingredients:

  • 1 cup mayonnaise
  • 3 tablespoons chopped gherkins
  • 1 tablespoon chopped capers
  • 1 tablespoon chopped parsley
  • 2 tablespoons lebanese green olives
  • 1 tablespoon chopped shallots
  • 1 tablespoon lemon juice

Method:

1. Mix all ingredients well; chill.

2. Serve with fried shrimp or fish.

Ingredients:

  • 3/4 cup butter
  • 1/2 cup heavy creme
  • 2 tablespoons chopped scallion
  • 3 tablespoons lemon juice

  • 1/4 teaspoons white pepper
  • pinch cayenne pepper
  • dash of Worcestershire sauce

Method:

1. In heavy sauce pan melt the butter, then heavy creme

2. Add all other ingredients and simmer 5 minutes.

Ingredients:

  • 4 egg yolks
  • 1 tablespoon
  • 1 tablespoon lemon juice
  • 1 tablespoon water
  • 1 tablespoon cream sherry
  • drops of Tabasco sauce
  • 1/2 cup melted butter

Method:

1. Combine egg yolks, lemon juice, cream sherry and tabasco in top of double boiler.

2. Heat water in bottom of double boiler to boiling point. 3. With whisk, mix mixture over until egg is creamy and will thicken to consistency of soft pudding.

4. Remove from heat and continue to whisk while slowly adding butter

Ingredients:

  • 1 cup tomato Sauce
  • 1 cup mayonnaise
  • 1 hard-cooked egg. chopped
  • 1/2 teaspoon mustard
  • 1/2 teaspoon grated onion
  • 1/4 cup pickle relish
  • 1/2 teaspoon all spices
  • 3 tablespoons brown sugar
  • 2 table spoon vinegar
  • 1 tablespoon lemon juice

Method:

1. In food processor combine all ingredients; and process for one minute for desired texture.

2. Serve with baked or broiled shrimp.

  • 3/4 cup salad oil
  • 3 tablespoons melted butter
  • 2 tablespoons lemon juice

Method:

1 Mix all ingredients very well, using whisker or slow speed processor.

  • 1/2cup Creole or brown mustard
  • 1/2 cup salad oil
  • 1/4 cup catchup
  • 1/4 cup cider vinegar
  • 1/4 teaspoon Tabasco sauce
  • 2 tablespoons chopped celery
  • 2 tablespoons chopped onion
  • 2 tablespoons chopped green bell pepper
  • 3 tablespoons chopped mushroom
  • 1/2 cup sherry tomato
  • 1 small carrot

Method:

1. Combine mustard, oil, catchup, vinegar, Tabasco and chopped vegetables; cover and chill.

2. Blend the mixture in blender for short time with some texture, don't over process it.. enjoy!

Bechamel Potatoes

Ingredients:

  • 1 1/2 pound boiled cooked potato
  • 2 tablespoons butter
  • 3 1/2 oz. diced bacon fat
  • 5 tbsps. flour
  • 2 cups milk
  • salt and freshly ground pepper

Method:

1 Peel potato ans mashed it smooth, by hand or use the riser, then allow the potatoes to cool down completely

2 Heat the butter and cook the bacon well, then add the flour and stir for another two min

3 Gradually add milk and whisk it to the right consistency

4 season with salt and pepper and serve warm... enjoy!

Ingredients:

  • 1 raw egg
  • 2 boiled egg yolks
  • 1 tablespoon French mustard

  • 2 table spoons shopped parsley

Method:

1 Place all ingredients into the blender in the order indicated and work to a smooth cream.

Ingredients:

  • 5 tbsps. evaporated milk
  • 3 oz. of horse radish
  • 2 cups table cream
  • 1 teaspoon mustard
  • 2 Table spoon shopped Chives
  • 1 pinch of sugar
  • salt and freshly ground pepper

Method:

1 Blend the cleaned and cut-up horse radish with the evaporated milk, mustard and seasoning to a smooth cream.

2 Add the cream and chives through and continue blending for another 30 seconds.

  • 6 tablespoons sour cream
  • 2 table spoons olive oil
  • 1 table spoon vinegar
  • 1 table spoon lemon juice

  • salt and freshly ground pepper

Method:

Put all ingredients into the blender and work into a thick cream.

Ingredients:

  • 8 tablespoon sour cream
  • 4 tablespoons French mustard
  • 3 hard-boiled eggs
  • 2 small apples
  • 1/4 onion

Method:

Wash the apples, core them and cut into pieces unpeeled.

Place all ingredients into the blender in the order indicated and work to a smooth cream.

Serve with hard-boiled or stuffed eggs, baked fish fillets or shrimp.

Ingredients:

  • 1/2 lb. tomatoes
  • 1/2 small onion
  • 1/2 cup fresh basil
  • 1/2 recipe white sauce " recently added"
  • 1/4 teaspoon sugar
  • salt and freshly ground pepper

Method:

1 In food processor, blend onion and tomatoes and basil to a fine puree.

2 Stir puree into the white sauce, bring to the boil and season to taste.

Onion Dip

This is a dipping sauce, it's great to use with toasted Pita Bread, taco and taco salad, also a good side dish for steak or Kofta Kabob

Ingredients:

  • 2 lbs. Fine chopped onions
  • 2 oz butter equal to 1/2 stick
  • 1 cup chicken stock
  • 2 tbsps. flour
  • 1 pinch of sugar
  • 1 teaspoon lemon juice
  • 1 teaspoon tomato paste
  • 1/2 teaspoon paprika
  • 1/2 cup sour cream

Method:

In heavet skellete heat the butter and toss the finely chopped onion, and sauté till lightly brown.

Add the seasoning and mix for very well for another minute.

Sprinkle with flour, and keep stirring

Add the stock and sour cream, then whisk it and allow to simmer for another two minutes.... enjoy

Basic Smooth White Bechamel Sauce

Simple White Sauce

Ingredients:

  • 2 cups stock or milk
  • 2 oz. butter or half stick
  • 5 tablespoon flour
  • 1/2 teaspoon salt
  • 1 teaspoon lemon juice (optional)

Method:

1 Cook the flour in the butter browning.

2 Gradually add the hot stock, stirring constantly, and whisk it gently and keep simmering for about 10minutes.

3 Season with salt and, if liked, lemon juice.

If the sauce is found to contain small lumps allow it to cool down slightly and rotate in the blender it will be perfectly smooth.

Fresh Mint Sauce for Fish and Lamb

Ingredients:

  • 1/2 cup of vinegar
  • 1/2 cup lemon juice
  • 2 table spoon olive oil
  • 1 bunch of cleaned mint
  • 1 teaspoon sugar
  • salt and freshly grind pepper

Method:

1 Place all ingredients in blender.

2 Allow to run for 1-2 minutes. Pour into jug and allow to stand for 15-20 minutes before serving.
